Tammy MacDonald is a Certified Chocolate Maker and Chocolatier specializing in Bean to Bar Chocolate. She is the owner and single operator of Au Chocolat.
Previously Tammy was the driving force behind the Hair Massacure for 17 years, and prior worked independently as a Naturopathic Practitioner and Iridologist. Tammy practiced Karate for over 10 years acquiring her 2nd degree Blackbelt in Uechi-Ryu Karate.
Au Chocolat was developed in 2019, inspired by a life-long love affair with Chocolate. The decision to set up shop was prompted by a necessary career change, leading to visits on Cacao Farms in Hawaii.
The discovery of the complexity of Chocolate solidified a career of welcomed challenge. Bean to Bar would be the primary focus.
With previous knowledge of Cancer and the Natural Healing Arts, creating healthier chocolate was the right thing to do.
Here at Au Chocolat, "made from scratch" is our motto. With exception of a few Novelty Bonbons, our Chocolates are created from the ground up.
Our ingredients (including our colouring) are derived from natural sources and preserved naturally. Acquiring quality chocolate and organic cacao beans through ethical practises is met without compromise.
We do not use unnatural colouring, glucose, high fructose corn syrup, artificial flavouring and preservatives in our products (with exception of Pop Rocks and Coke).
*Trace amounts of alcohol are used for preservation along with refrigeration with cream based ganaches.
Our Jams / Jellies, Nut products, Ganaches and Caramel are all made from scratch.
