Where do you source your chocolate?

What is Bean-to-Bar?


Bean-to-bar means that the chocolate is created directly from the cacao bean. This labour intensive process requires skill and precision involving roasting, cracking, winnowing, grinding and refining. Chocolate making is a rarity and adds a whole new level of expertise. 


What do we use for colouring?


All of our colouring is Non-Azo and  naturally derived from fruits and vegetables. Natural colouring is more expensive and harder to work with, however much safer to consume. We use mostly Roxy and Rich 


Is there Gluten in our products?


All of our Bonbons (with exception of our Liquorice) are gluten free. 

Our Chocolate Bars are gluten free with exception of Coffee Crunch.


Do we produce Vegan and Dairy Free products?


YES! We have a good selection of chocolate bars and bonbons. See our  products under the Vegan category


Do we use Corn or Gluten in our products? 

NO! Although Glucose and Corn Syrup are widely used for stabilization and preservation, we do not add corn based additives to our products. All of our bean-to-bar chocolate and most of our fillings are made with organic cane sugar. 


Do we use alcohol in our bonbons?


Many of our ganaches (fillings) are preserved with a minute amount of pure alcohol. We find this to be a safer and more tolerable means of keeping our bonbons fresh.  This amount (1 capful / 5 grams per 2000 grams ganache). In addition, our bonbons are also refrigerated until ready for consumption. At room temperature our bonbons are safe to eat for 1 week.
