Here at Au Chocolat, Truffles are referred to as chocolate ganache shelled with chocolate (all of our chocolate is created in house).
Our traditional truffles are in the shape of cacao pods (as illustrated in the photo) and represent the region from which the beans were grown. This is intended to showcase their terrior (distinctive flavour of the region).
Typically these traditional truffles are not intended to be colourful
Our truffle centres (ganache) contain the same chocolate from which they are shelled.
